Food allergy is well recognized in medicine as a cause of acute attacks of asthma, eczema, rhinitis, hives and swelling. These types of reactions are called immediate or type 1 hypersensitivity reactions and are mediated by IgE(immunoglobulin E).
Another type of food allergy that is “masked” or “hidden” has been the subject of controversy for decades. These are known as food sensitivities. One study estimates 60% of the population suffers from hidden food allergies. Symptoms include fatigue, migraines, IBS, inflammatory bowel disease, gallbladder disease, arthritis, asthma, rhinitis, recurrent infections, enuresis, nephrotic syndrome, ADHD, epilepsy, eczema, psoriasis, and canker sores.
Unlike type 1 reactions, hidden food sensitivity symptoms may not occur for hours or even days. They may not even occur every time you ingest the trigger food depending on how the food is cooked, hormonal cycles, processing of the food, and co-ingestion of other allergens. These reactions to foods may not clinically be considered a true allergy if it does not provoke a type 1 response but should be considered a food intolerance. Furthermore allergy-addiction syndrome can occur where the person actually becomes addicted to the food they are allergic to.
